Job Description:
As a Scientist / Senior Scientist, you will report to our technically-oriented CEO and play a pivotal role in our research and development efforts to create cutting-edge products. You will collaborate closely with our team to tackle the challenges of replicating the flavor, texture, and functionality of dairy cheese. This role demands expertise in food science, material science, polymer chemistry, and protein chemistry, along with a keen curiosity and willingness to explore beyond traditional disciplinary boundaries (think sensory testing, food science, etc.). We think it’s exciting to work on something where we get to interact with the thing we are creating including getting your own sensory experience. We are a small and focused company and especially in this role, you'd have a big part to play!

Key Responsibilities:
  • Conduct research to replicate the flavor and functionality of dairy cheese, focusing on properties such as texture, melting, stretching, grating, and shredding.
  • Investigate cost-effective protein, carbohydrate, and fat sources, and develop innovative methods for their manipulation to achieve desired product attributes.
  • Analyze structure-function relationships and propose novel solutions to enhance product performance.
  • Lead protein modification experiments and post-translational modifications at various scales, from lab-scale to pilot-scale.
    Collaborate with cross-functional teams, including Product Development and Commercial departments, to ensure we meet the needs of customers.
  • Conduct small-scale sensory evaluations to assess product quality and refine formulations accordingly.
  • Contribute to documentation and organization of company operations, utilizing tools such as Asana and Google Workspace.
Qualifications:
  • Typically a PhD in Food Science, Food Chemistry, Protein Chemistry, Biopolymer Chemistry, or related field.
  • Demonstrated expertise in material science, polymer chemistry, and protein chemistry and demonstrated willingness and curiosity to go beyond the traditional confines of these fields.
  • Strong analytical and problem-solving skills, with the ability to think creatively and propose innovative solutions engineering and modifying proteins to enhance product performance.
  • Highly motivated and adaptable, with a willingness to take ownership of projects and drive them to successful completion.
  • Excellent communication and interpersonal skills, with the ability to collaborate effectively within a multidisciplinary team.

Nice-to-have but not required
  • Experience with pilot-scale production and process engineering
  • Proven track record of research and development in the food industry

This position is based in our Oakland, CA location in the heart of the San Francisco Bay Area’s East Bay biotech innovation community - our client may agree to offer relocation assistance for this role.
